#MyPuraRecipes – Shrimp Malabar

Shrimp Malabar is a delicious, protein filled dish, perfect for a simple solo or couple’s meal and just as welcome as the starter or main at a dinner party. With accompanying vegetables, this low-calorie, protein rich meal can be enjoyed without affecting the strong progress you’re making as part of your Pura macronutrient counted meal plan.

Here’s what you’ll need

  • 4 Tablespoons of Ghee
  • 10 Fresh Curry Leaves
  • 1/2 Teaspoon of Black Mustard Seeds
  • 100g of Onions – Finely Chopped
  • 100g of Fresh Tomatoes and Fresh Chopped Tomatoes
  • 1 Teaspoon of Fresh Ginger Puree
  • 1/2 Teaspoon of Fresh Chilli Powder
  • 1 Teaspoon of Coriander Powder
  • 1/2 Teaspoon of Turmeric Powder
  • 350g of Tinned Tomatoes
  • 100ml of Chicken Stock
  • 1/4 Teaspoon of Tamarind Paste

What to do

  1. In a saucepan, heat 3 tablespoons of ghee until hot
  2. Add the curry leaves and mustard seeds to the pan
  3. Next, add the fresh ginger and fry
  4. Add the onions and continue to fry the contents on a medium heat for around 5 minutes. Fry onions until golden
  5. Add the chilli, coriander, turmeric and fry contents for another 2 minutes
  6. Next, add in the creamed tomatoes and tamarind paste
  7. Fry for a further 2 minutes
  8. Following this, add the stock and let the pan contents simmers. Ensure that the consistency is not too watery
  9. Finally, stir the ingredients, taste for seasoning and serve while hot

This recipe works well when served with brown rice or lentils – the choice is yours!
